WHEAT BREAD WITH SUNNY SIDE UP AND GREENS


A slice of wheat bread or two, with some sunny side up eggs for protein and green vegetable salad is a very healthy way to start the day. Sometimes, I go for avegetable breakfast and

leave the carbs out. The body still needs some carbs to remain fit and healthy. No matter how much we want to lose weight, complete elimination of carbs can be dangerous. A balanced meal must contain all, including carbohydrates.

As adults, we help ourselves by drastically reducing the quantity of carbohydrates. We know that carbs contribute a great deal to weight gain, we also know that complete elimination is not healthy. To balance it, we can take less, like one or two slices of bread instead of a whole "loaf of bread." Vegetables, especially the greens, are very important, if we make them a part of our daily life style, we will come to realize that it is not only an apple a day that keeps the Doctor away. Green vegetables a day also keeps the Doctor away. How I make my salads is very simple and easy.


There are many healthy breakfast Ideas on this blog. Good breakfast ides for the whole family. Our Nigerian dishes are mostly carbohydrates, but, with a little effort, we can eat right.

We have heard and read too many times that breakfast is the best meal of the day, and as such should not be missed. Most mornings, there is just no time to come up with a healthy

breakfast for the family. I will be sharing a few suggestions of "quick fix breakfast" for busy families.

HOW TO COOK TASTY TIN TOMATO STEW; CONVERT TO NIGERIAN JOLLOF RICE


Making very good canned tomato stew is not as difficult as most people think. My tin tomato stew doesn't taste sour and it's because of the cooking method. You can cook tin tomato stew that's as good
as bukka style stew without mixing fresh tomatoes. I made this stew for jollof rice as shown on the pictures below: With fresh tomato scarcity, you can still enjoy good rice and stew; good jollof rice at home.




INGREDIENTS FOR STEW:

Medium sized canned tomato paste
3 medium sized onion
1 teaspoon Black pepper
soya oil
salt seasoning cubes
Fresh pepper (I used my preserved pepper sauce)
Water
Beef stock

COOKING DIRECTION:
First I blended the tomatoes and chopped onion, fried in oil with pepper and seasoning cubes until tomato begins to break into tiny bubbles, then I added the stock and black pepper. Allowed to boil before I check for taste

INGREDIENTS FOR JOLLOF RICE:
I didn't add bay leaves this time, just thyme.


5 cups rice
1 tablespoon thyme
1 medium sized Onion
Salt
Water
These ingredients I used to boil the rice before mixing my tin tomato stew. The rice already tasted good before stew came in.

NIGERIAN PLANTAIN PORRIDGE WITH UGU VEGETABLE (FLUTED PUMPKIN)


Nigerian plantain porridge cooked the way we did before on the blog, ugu vegetables are then stirfried with onion and crayfish, added and delicious pot of plantain porridge is ready.

INGREDIENTS:

5 fingers unripe plantain
1 bunch ugu vegetables (fluted pumpkin)
meat (I used half a cow tail, you can cook with any meat of choice)
3 tablespoons ground crayfish
1 medium sized onion
2 cups palm oil
pepper as preferred (I used 1 teaspoon of my pepper sauce)
Salt to taste
2 knorrSeasoning cubes for porridge, 2 for vegetables
Water may not be needed because there is stock from the boiled meat.


COOKING DIRECTION:
First I pressure cooked the meat with salt, onion and seasoning cubes. Then added the plantain, pepper, salt just the way Nigerians cook normal plantain porridge. I checked for taste, stirring often until porridge is cooked and thickens. There is no oil added at this time.


In the fry pan I stir fry (with palm oil) my ugu vegetables with onion, crayfish and knorr beef seasoning cubes, checked for taste, satisfied before I emptied into the pot of oil less porridge. Stirred, tasted and turned off the heat.

HOW TO MAKE NIGERIA EGG ROLL


Nigerian egg rolls are made with dough and a few other ingredients mixed together, with a hard boiled egg rolled inside to form a ball and then deep fried. They cook well in low heat but can burn easily if the oil is too hot. So, a blog reader searched for Nigerian egg roll recipes on the blog and had
to contact me when she couldn't find any. I quickly remembered that the dough I use for pizza can give something close, had to add grated nutmeg and a raw egg to the pizza ingredients to soften a bit, add nutrition. Gave me the perfect egg rolls. Honestly, I made this small thinking "first attempt" cannot be great but I surprised myself, surprised everyone that ate and found it hard to believe that I didn't buy the egg rolls. When the kids rushed everything and won't stop asking for more, I had to quickly make a second batch that we all called "recession egg rolls" because these ones were made with pieces of boiled eggs unlike the first batch. These second batch is smaller in size so, the same ingredients produced 12 egg rolls here while the first batch with full eggs gave just 8.

INGREDIENTS
:
3 cups flour
3 tablespoons sugar
1/2 teaspoon salt
1 teaspoon grated nutmeg
3 teaspoons yeast
1 raw egg
8 hard boiled eggs
250 ml warm water
1/2 teaspoon baking powder.

COOKING DIRECTIONS:

Add all the ingredients to flour, mix, break the egg in there, mix a little and then pour in the warm water and mix for 5 minutes.
Put dough ball into an airtight container and leave for 10 minutes.
After 10 minutes, roll the dough in a slightly floured surface and cut with a round cup, lid or cutter. Place an egg in there, roll it up with your hands and continue that way until all the eggs are rolled in the flour.
Deep fry slowly in vegetable oil. Fry one side till brown before flipping and keep the flame low so it doesn't cook too fast and burn.
Remove from oil, place in paper towels and then serve.
This ingredients produced 8 delicious egg rolls.
